4 MAJOR CHINESE CULINARY SCHOOLS

During the past few weeks, we have informed you on our social networks about the preparation of traditional tasting menus from 4 major Chinese culinary schools. We would like to provide you with more information about this offer here on our website.

We have been thinking for a long time how to present the diversity and beauty of Chinese cuisine in the Czech Republic and we can tell you that it is not an easy task at all. Many people do not yet know that some common Chinese restaurants offer dishes that do not have much to do with Chinese traditional cuisine. Anyway, we took this situation as a challenge and decided to create a tasting menu from the four main Chinese culinary schools - Zhejiang, Guangzhou, Sichuan, and Shandong.

Each menu consists of 5-8 different meals and the price per person is from 390 CZK - 540 CZK. Along with delicious dishes, you will try the Asian way of dining, because we will bring the food in the middle of the table and everyone can put on their plate what they want.

Shandong Cuisine
Shandong cuisine, referred to as Lu cuisine, claims a long history dates back to 220 B.C.E. It is regarded as the first cuisine of all Chinese eight cuisines. The key features are original flavour, freshness, crispness, and tenderness of the ingredients. Seafood is a significant component of Shandong cuisine. Shandong cuisine represents the most prevailing food styles in north China. Most modern schools of cuisine in north China, such as those of Beijing, Tianjin, and the Three Northeastern Provinces, are all branches of Shandong cuisine.

Zhejiang Cuisine
Zhejiang cuisine also called Zhe Cai includes the specialties of Hangzhou, Ningbo and Shaoxing in Zhejiang Province. Each of the three sub-cuisine traditions are all characterized by the careful selection of ingredients, emphasizing minute preparation, as well as unique, fresh and tender tastes. Zhejiang cuisine specializes in quick frying, stir-frying, deep-frying, simmering and steaming, by which the dishes obtaining the natural flavor and taste. Zhejiang is known as a wealthy and sophisticated province, and its elegant cuisine truly reflects that.

Cantonese Cuisine
Cantonese cuisine is one of the more internationally-recognized types of Chinese food and it comes from the Guangdong province of China. The most distinctive thing is its freshness. Cantonese cuisine uses a variety of cooking methods, though steaming and stir frying are the most favored. Boiling, charcoal grilling, and braising are other popular techniques in Cantonese cooking. Many Cantonese chefs prefer to keep the natural flavors of the ingredients and look to deliver a dish with well-balanced flavors that isn’t greasy.

Sichuan Cuisine
Sichuan cuisine is a type of Chinese cuisine that comes from the Sichuan province of southwestern China. Sichuan cuisine is typically a very spicy type of Chinese food and is also known for being very flavorful. Many Szechuan dishes incorporate a lot of garlic and chilli peppers. It can be traced back more than 2,000 years. The dishes are rich and spicy, often including Sichuan peppercorns & Sichuan chili peppers. Szechuan cuisine is also well-known for its fish dishes and offers more beef dishes than other types of Chinese cuisines, which is said to be due to the abundance of oxen in the region.
